Flans
These
red custards can be slipped out of the cups and topped with
thinly sliced avocado for a savoury course, or served as
dessert.
2-4
small or 1 medium-huge beet, baked or boiled til done, and
peeled
1 cup fromage frais or soft goat cheese
2 eggs
1 tbsp. honey
a pinch of mace or nutmeg or cinnamon or fresh grated
ginger, as you like
optional 1 tsp. grated orange peel
Preheat oven to 350 and butter 3-4 porcelain ½ cup custard
dishes. Combine all ingredients thoroughly in a processor.
Scrape down the sides several times until smooth. Pour into
the custard dishes.
Place them in a square or round cake pan and add a few cm.
of water to the pan in the oven. Bake for 45 minutes.
They will puff up like mini soufflés, then deflate. Serve
warm or cool.
